February is a time for soft romance and the anticipation of spring, so for this month’s inspiration board and signature cocktail, I wanted to keep things light and sweet. I hope you enjoy this white peach + rose lemonade signature cocktail. The peaches mellows out the traditional tartness of the lemons and the rose water adds a soft and sophisticated flavor, elevating traditional lemonade to a drink befitting of a wedding. Because it’s non-alcoholic, it’s a perfect way to hydrate your guests, especially at altitude. Serve it as a refreshing pre-ceremony drink. To offer as a traditional signature drink, add vodka. White Peach + Rose Lemonade Refreshing Signature Drink
Serves 4
- 3 cups white peaches, chopped into pieces
- 1 1/2 cups water
- 1 cup fresh-squeezed lemon juice (from about 7 lemons)
- 3/4 cup sugar
- 4 tablespoons rose water
Directions for 4: Place chopped peaches, water and sugar in a heavy bottomed sauce pan over medium heat. Allow to cook down, about 20 minutes. Set aside to cool slightly, then run through a blender until pureed. Pour peach mixture through a fine sieve and place in refrigerator until chilled. Meanwhile, squeeze the juice from lemons. Once peach mixture has chilled in a pitcher combine with lemon juice and rose water. Serve chilled.
Serves 100
To serves a large crowd, forego the fresh chopped peaches and use organic peach nectar.
- 2 gallons organic peach nectar
- 1 gallon plus 2 quarts of lemon juice (preferably from fresh lemons)
- 19 cups of sugar
- 1 1/2 cup of rose water
Directions for 100: Place peach nectar and sugar in a heavy bottomed sauce pan over medium heat. Allow to cook down until sugar is dissolved, but don’t let it boil. Set aside to cool slightly then place in refrigerator until chilled. Meanwhile, squeeze the juice from lemons. Once peach mixture has chilled in a pitcher combine with lemon juice and rose water. Serve chilled.
