Today’s inspiration explores the rich reds of the holiday season and snowy whites of winter. Winter can be such a magical time so I used elements that reminded me of a winter woodland fairytale. The deep reds of pomegranate, soft greens and light grays of a winter forest, coupled with the whimsical details of a birch bark cake and a dainty flower crown creates a truly enchanting look. The bright orange and cranberry flavors and the effervescence  of the champagne make this Pomegranate Sparkler a perfect drink for winter celebrations.

This sweet and zesty drink is perfect for busy holidays and simple celebrations. The sublime flavors come from simple juices, like cranberry and pomegranate that you can pick up at the grocery store, combined with a make-ahead orange simple syrup. This sparkler will elevate your signature cocktail hour or your champagne toast.

Directions for a Pomegranate Sparkler. The most difficult part of this delightful cocktail is making the simple syrup, which isn’t difficult. Simply combine Pomegranate juice, cranberry juice, orange simple syrup and fresh squeezed orange juice. Serve guests by pouring the juice mixture into a champagne glass and topping with champagne. To make the orange simple syrup: Peel orange rind from the orange in long strips, careful to avoid the white pith. Bring orange rind, sugar and water to a boil, stirring until sugar is dissolved. Cool completely. Remover orange rind and refrigerate for up to a month before serving.

Tips: Make the orange simple syrup up to a month ahead of time. Also, combine the juices in large pitchers or containers and chill the night before. That way, your guests are quickly served by simply pouring the juice into a champagne glass and topping with champagne. (and don’t forget the pomegranate seed garnish!)
