Amazing DIY Mini Cakes in Two Simple Steps

Here are two facts about me: my birthday is tomorrow (July 26) and I love to bake. In fact I’ve been baking since I was 12, and even baked my own 4-tier wedding cake! But I also know that sometimes, you have better things to do than stoop over a hot oven and bake a celebration cake or party favors. You have friends to visit, family to catch up with, errands to run.

That’s why I was thrilled to see the “Design It Yourself” section on cakes in the most recent issue of Martha Stewart Weddings. Yes, Design It Yourself. After all, not everyone has the time or skill for Do It Yourself, and even if you’re one of those lucky gals possessing both time and skill, can you really do everything yourself? No. You can’t. (I am freeing you from that idea right now!)

These simple mini cakes are perfect for bridal showers, engagement parties, and even your dessert table. They’re made from plain sheet cake cut into circles with different sized biscuit cutters. They’re decorated with fondant cutouts (use cookie cutters), nonpareils or confectioners sugar shapes (use vellum stencils), and sweet little icing dots (use royal icing, or just buy some cake decorations, like pearl dragees). Basically, all you have to do is cut and decorate! Done and done! Now get out there and do something fun!
